A Twinkie is made with beef fat. Tallow is the fifth ingredient. The list runs sugar, water, enriched flour, high fructose corn syrup, tallow, dextrose, egg. Then under 2% there is hydrogenated tallow on top of that, plus soybean oil and cottonseed oil. That is a shelf life decision, not a scandal. Tallow is saturated, and saturated fat goes rancid much slower than the unsaturated kind. Hostess was using it long before anybody had opinions about beef fat. The cake does not last forever either. Hostess ran a 26 day shelf life for decades and stretched it to around 45 after the 2013 relaunch. What gets it that far is that there is very little free water in a Twinkie and the sugar binds up most of what is left. It does not mold. It goes stale. The starch recrystallizes and it dries out, which is a completely different process.

Whole milk has had cream taken out of it. A cow gives milk at 3.5 to 5% fat. Whole milk in the carton is 3.25%. The FDA standard for milk says you can pull fat off to hit that number, and that's how it's done. All the milk in the case comes off one machine. Raw milk goes into a centrifuge. Fat is lighter than water, so the cream spins to the middle and the skim spins to the wall. Two pipes come off the separator, one cream and one skim. Everything after that is a mix. Skim plus a little cream is 1%, a little more is 2%, and 3.25% is whole. Half and half is 10.5% and heavy cream is 36%. The plant sets the ratio and fills the carton. There is no such thing as a 2% cow. It's whole milk with some of the cream pulled off, in a different carton at a different price. The cream that came off goes to the churn and comes back as butter.

Nuclear fusion just got a reality check. Researchers from MIT checked which fusion designs have a chance of ever making economic sense. They carefully evaluated the construction and maintenance costs and the expected profit made by selling energy. Their calculations suggest that the relevant metric is the amount of power produced per surface area surrounding the plasma. If correct, this strongly disfavors large machines like ITER, whereas compact high-field tokamak designs such as SPARC and modern stellarator designs have a fair chance of breaking financially even. The researchers find that the best strategy is not to make the reactor exceptionally durable but rather to make sure that radiation-damaged parts can be replaced quickly and at a low cost. Technologies that use inertial confinement via lasers or ion beams also meet the target, but they have a secondary problem: they must produce large numbers of targets cheaply. In light of the progress in mathematics, we at Edison Scientific and FutureHouse have assembled a set of Millennium Problems for Biology. They are chosen to be very hard to solve but very easy to validate in a simple laboratory environment. Any of these, if solved, would mark a major advance in biotechnology, and most of them would contribute materially towards curing disease. These are, in some sense, the “last reasonable eval” for AI in biology. This was work primarily by @MichaelaThinks and myself, with contributions from many others. Short descriptions below. The full descriptions of the problems with acceptance criteria are at the Bio Millennium Problems website, linked in the next post. Share more if you have ideas. If they meet our criteria, we’ll add them to our list (with attribution and permission).

There's less than 2% cream in Cool Whip according to the ingredient list. The list says water, corn syrup, high fructose corn syrup, hydrogenated vegetable oil, skim milk, and then the under 2% ingredients, starting with light cream. After that you get sodium caseinate, xanthan and guar gums, modified food starch, polysorbate 60, sorbitan monostearate and sodium polyphosphate. These ingredients are designed to keep the air contained. Whip air into water and oil and it wants to collapse, so you need gums and emulsifiers to hold the foam up. A serving is 2 tablespoons and it weighs 9 grams. 2 tablespoons of water weigh roughly 30 grams so the rest of the spoon is air. We call that overrun, and it's why a serving only has 25 calories.
