Hey everybody! The Bucks yeast is breeding and should be on the way this weekend. I’ve had several bummer events happen in my family and simultaneously an avalanche of work in my day job. I’m doing my best- I’m sorry for the delay, and for UPS 😂

Happy Sunday, bakers. I promised I’d do a step-by-step sourdough thread with explicit-everything for people having trouble baking. SO here we go. (I’m working on a nasty math problem while I do this so there might be odd pauses.)

It just so happened that I just finished the wort for a batch to be made using the yeast @SeamusBlackley made famous when I finally isolated the other one. I split the wort and now both batches are fermenting. The attached is the batch using the beer vessel yeast

@ClubYeast Made some rolls using the yeast obtained from the MFA with emmer and a bit of barley (used barley flour to manage consistency and for dusting). Forgot to throw in ice cubes at the beginning and the crust is quite crunchy

It smelled so good we cut it before it was really ready. It’s amazing. I’ve never had wholemeal sourdough with coriander, and It’s crazy good. The AE bakers knew what they were doing. (I don’t; I underproofed and overbaked but hell @PaulHollywood isnt around so nobody knows.)
AE cultured Emmer bread with Flax Seed oil, salt and roasted coriander. What I’m doing here is practicing a bunch with these ingredients to prepare for baking in an accurate AE way, without an oven. I need to be pretty good at the dough first.
