Steam, not boil, your greens. Leafy Nigerian favorites like ugu, spinach, or amaranth lose vitamin C fast when bathed in water. A quick 3 to 4 minute steam keeps more nutrients and saves energy. #NutritionTips #FoodScience

Leftover rice hides a quiet danger: Bacillus cereus spores survive cooking and multiply if rice sits out. Cool quickly in a shallow layer, refrigerate at 4°C within 2 hours, and reheat to steaming hot before eating. #FoodSafety #FoodScience

Cooking tomatoes increases lycopene availability, especially with a bit of oil. Tomato based dishes often offer more lycopene than raw tomatoes. Practical tip: add a little oil to tomato based dishes to boost absorption. #FoodScience #Nutrition

Leftover rice: it can host harmful bacteria even after cooking. Bacillus cereus spores survive heat and grow quickly at room temp. Cool quickly in a shallow container, chill within 2 hours, then reheat to steaming hot. Don't reheat more than once. #FoodSafety #FoodScience

Fermentation is science you can taste: traditional gari processing lowers cassava cyanide levels and reduces antinutrients, boosting mineral absorption and shelf life. Safe, tasty, simple. 🧪

Fermentation works like a natural safety switch: soaking and fermenting cassava lowers cyanide risk, improves texture and taste in gari. Practical takeaway: proper processing makes traditional staples safer and tastier. #FoodScience #NigeriaCuisine

Beans are a global staple, but phytates can hinder mineral absorption. Soak black eyed beans 8-12 hours, rinse, then cook in fresh water. A simple step that can boost iron and zinc uptake and digestion. #NutritionTips #FoodScience

As a Food Scientist, I rate it: Taste: 8/10 Blood tonic: 0/10 What other food lie did you grow up hearing? I will bust it with science next. #NutritionFacts #FoodWithMatilda

Malt is NOT bad - it's a nice energy drink. But it's not medicine. If a doctor says you're anemic, malt will NOT fix it. You need iron-rich foods or supplements. Stop letting shop owners prescribe malt + milk for low blood. Go to the lab.

If malt drink gives blood, why are blood banks not using it? 😅 Let's bust the biggest lie we grew up hearing in Nigeria.

What to do: - Buy from a trusted mill, not just the brightest red one - Don't chase color, chase smell and taste - If it's suspiciously cheap and too red, run Have you ever bought palm oil that tasted like chemicals?

@Godsmer66793391 You are welcome 🤗

QUICK TESTS before you buy: 1. Rub Test:Rub a little on your palm. Real palm oil will stain but fade. Fake dye will stain your palm RED for hours and is hard to wash. 2. Water Test: Put 1 spoon of oil in a glass of water. Real oil will float and water stays clear.

3.Heat & Smell: Real palm oil smells like... palm fruits. Fake one has a chemical/paint smell when hot. 4.Why do sellers add it? Sudan IV makes dull, old, or diluted palm oil look fresh and "rich". It's cheap. But NAFDAC banned it. It's a Class 3 carcinogen.

@Godsmer66793391 Alright, thanks for the suggestion.

Your palm oil is TOO RED. That bright red palm oil in Ogbete Market might be dyed with SUDAN IV - a chemical used for shoe polish. It causes cancer. here's how to spot fake palm oil : Real palm oil is naturally deep orange-red, not blood red. I

Unpopular food opinion that will put me in trouble: > Most of the "healthy" food you buy in the supermarket in Nigeria is not healthy. It's just marketed well. > Packaging says "100% natural" but ingredients say otherwise. > What's one food you stopped eating?

Thank you for the welcome back! 🙏 Let's start🤗: Myth vs Fact First myth: Washing raw chicken with salt & vinegar makes it safe. False. It spreads Salmonella around your kitchen. Just cook it to 74°C. That's it.
