Yesterday I bought a fresh ready-to-use #pizza dough ball in a Italian grocery thinking: « let’s try something professional ». Well the dough was too dry, did not proof well and was very difficult to shape. I guess quality is more a matter of dedication and love than experience.
Made those using the frozen dough balls from last time. The dough was really flat and “weak” even though loaded with bubbles. It’s probably because I took them out of the fridge too early and it over-fermented. (12h before baking)
