What healthy fats/oils do I use?
The phrase ‘essential carbohydrates’ is misleading and incorrect. Of the 3 macronutrients, only fat and protein are essential in our diet. Dietary glucose is not essential. Glucose can be made from fat by the liver in a process called gluconeogenesis.
This is what 65 years of not eating junk food looks like in an 82 year old woman. Maggie is a rancher in Canada who works 14 hour days (in -40 degree during the winter months). She eats only meat & drinks only water, and has been doing so for 65 years. She is 82 years old.

The phrase ‘essential carbohydrates’ is misleading and incorrect. Of the 3 macronutrients, only fat and protein are essential in our diet. Dietary glucose is not essential. Glucose can be made from fat by the liver in a process called gluconeogenesis.

In most medical fields, symptoms lead clinicians to look for causes. In psychiatry, symptoms lead to a diagnostic label that becomes the default "cause." When we stop looking for the cause, it can instill a sense of hopelessness and helplessness. We can do better.
